Alright y’all, let’s talk turkey...literally!


Every year around this time, folks start gearing up for the big cook. The messages roll in: “My turkey came out way too salty this year!” or “I used the same brine I always do… what happened?”


Well, friends, we’ve officially hit what I like to call The Brine Bind.



What’s the Turkey Brine Bind?

In short: more and more store-bought turkeys are coming pre-brined; sometimes labeled as “basted,” “enhanced,” or “injected with up to X% solution.”

And what’s in that solution?

Salt. Lots of salt.


That means you’re starting your cook with a bird that’s already been seasoned from the inside out. So when you drop that turkey into your usual homemade brine, no matter how good it is, you’re doubling (sometimes tripling) the salt content. The result? A bird that tastes like it’s been dragged through the Dead Sea.


Why Are Companies Doing This?

Because pre-brining or “enhancing” keeps the meat juicy and forgiving for the average home cook. It’s great if you’re roasting a turkey straight out of the package.

But for BBQ folks? For those of us who take pride in our brines, rubs, smokes, and slow cooks?

Turkey brine bind is real, and can throw off your whole game.

To Brine or Not to Brine?

Here’s the million-dollar holiday question:


If the turkey is already pre-brined… should you still brine it?


– Do you cut the salt?

– Skip the brine altogether?

– Do a shorter brine?

– Or toss tradition out the window and go with a dry brine instead?


There’s no one-size-fits-all answer, but one thing’s for sure: reading that label matters more than ever.
